Publishers can have different requirements; it can be that you have to wrap your material around again or so.
So I would think it simple, not to use more special functions, etc., which should be possible for novels. Your job is finally to write, not to deliver a printable document ^^
Simple text processing programs are quite suitable to write even larger works. Things can do anything that is needed for a usual novel. Some authors even write in simple text files or handwritten. Nominal options are here:
Many authors like that the first two are automatically stored in the online version and are available independently of the device with any internet connection. Many also appreciate local software and to be independent of large companies.

The Text set-System LaTeX, as mentioned by another answer, is a very powerful option, which I would not recommend here (have worked with it for a long time).
It is just intended for a semi-final set, but very needy to get used and has more special syntax, which can cause problems if it is not accepted as a format by the publisher (many publishers, especially in the technical field, but also put on LaTeX, but have restrictions, etc.).
A medium thing between text processing and sentence with significantly more modern syntax than LaTeX would still be Type (free & open source1, the provider is located in Germany). Some time ago, for all my writings from LaTeX, I moved to the local version of it and therefore satisfied.
