How do I know that the number of electrons has remained the same?

Hey,

Couldn't there also be a neutron, a protron and an electron here?
because the charge would then remain the same and the mass number would be 2 higher.

Or would that no longer be iron but another element?

Correctly recognized. The element is determined by the number of protons, the mass number by neutrons + protons.
