Can you copy a partition from one SSD to another without losing data? So, for example, if you have apps installed on the old SSD, you can then copy them to the new SSD without having to reinstall them?

Yes, you can clone hard drives, with corresponding software. But I wouldn’t recommend it. It’s a problem.
