Why does chocolate sauce for ice cream taste so strong?

I have this Manner ice cream in a tub. It has a light, dark chocolate sauce swirl in it. When I had the sauce on its own on a spoon, I noticed how pungent and sweet it tasted, almost fermented, which was quite strange. The ice cream itself tastes normal and was just bought recently. It's hazelnut ice cream. Could the hazelnut have somehow altered the chocolate sauce?
I once had chocolate sauce on the ice cup that was moldy.
