She’s still a demon and wasn’t turned into a human being. She has overcome the sunlight at the moment. In Staffel 4, you sometimes see them in their demon form.
Demons at low level even regenerate when they lose their head, unless they are a nichirinklings. So, if sunlight can’t touch her, it follows that a nichirinklings act like a normal blade, so that she wouldn’t die even if her head was knocked off. That’s why she’s as good as immortal.
How she overcome the sunlight? You don’t know. It wasn’t exactly explained in the anime. I still hope I could help you
