How does lecithin stabilize an emulsion (chocolate)?
Hello,
I was wondering how lecithin stabilizes chocolate as an emulsion, since lecithin is not a surfactant.
How does lecithin work as an emulsifier?
Thanks in advance for the answers

I always feel healthy after eating spicy food. I find it particularly pleasant when I have a cold.
I only have an appetite for salad every day and that is the only thing I like to eat. If it were possible, I would eat salad every evening. I eat a salad almost every evening and from morning to noon I never have much appetite for anything Is this still normal?
The pizza itself won't be any healthier, but does it matter whether I eat the eggs as is and then eat the pizza without them, or whether I put them on top of the pizza? So, am I getting the same amount of protein as if I eat the eggs as is? Thanks
How do people with histamine intolerance eat? I googled a bit and almost every food is high in histamine. Or do you take pills and can eat whatever you want?
or you almost puke? It's a really disgusting feeling, but why is it if it's your own hair anyway?
These are additives in fats and fat oils and especially rich in eidotters and herbal cells. Lecithins allow the emulsification (mixing) of fats and water and are therefore important natural surfactants (emulsifiers) for food and feed. Gucke
