How long should cookies be baked?

Hello dear community.

I've been busy baking since Christmas, but it's more for practice. I've tried a lot of things and I always have the same problem.

How do I know the cookies are done? For some cookies (rolled out 3mm thick), the recipe calls for 8 to 10 minutes. But then I don't know when the right time is to take them out. They'll either be too soft or too hard.

The second question is fan-assisted or top and bottom heat?

I would be very grateful if you could give me some tips and help me finally make the perfect cookies this year 😅

Hi!

So I always bake my cookies with air circulation and leave them in the oven for 7 to 10 minutes that they are also beautifully bright and not too dark. The fact that they are still a little soft when removed is normal, which harden with cooling.

I always bake with air.

I always use the same dough and the first one always decides everything with me. Just take 1 cookie out with it and after 7 min. Let it cool down and see if it likes it. I do this once after 7 min and after 10 min. If they are too soft at 7 and too hard at 10, then 8min would be perfect.

From the 2nd, a timer is always set and taken out after 8 min. I always leave the oven. No matter how long he runs between the pipes so that the heat remains stable and my system continues to work.
