Why is my NVMe SSD sometimes slow and then fast?

Sometimes it is fast and then I have 100 kb/s

Because this is an SSD with internally slow speed.

When copying smaller files, the data buffer on the interface is enough and it is fast. But if it is full, then the slower speed of the internal SSD applies.

Because you bought one with QLC.

QLC = QuadLevelCell

QLC SSDs offer large storage capacities at a lower cost, and are well-suited for media storage and archival purposes, although they offer lower performance and endurance compared to other types of SSDs like TLC.

Quad Level Cell, which has more memory at a cheaper price. For this, it is very slow and not durable. Mostly the SSDs have a small SLC cache that is very fast, but also quickly the powder goes out. Better buy TLC.
