Why does my brushless motor slow down after acceleration?

Hello, I'm trying to control a brushless motor with an Arduino. I'm using the following YouTube video as a guide:

I tested the strength and it could support 33g. When I tried again later, the motor could only support 24g. Every time it accelerated, it would lose some of its power again.

Why does this happen and how can I prevent it?

I also assumed at least 100g. This is the engine:

sounds like a power supply. How many watts do you run the engine?
