These two websites I found on the fast ones, if you look more intensively, but surely you will find more. In the Reel it was only mentioned that there are fewer overnight stays in Japan and also restaurants/food shops on the route, so you should plan more than book on the classic South European pilgrimage routes and possibly also shelters beforehand, otherwise you might be booked out and the next one further away.
To Santiago, it is supposed to be very crowded, just the last day-trips before, so it could be exciting to pilger in a completely different country.
Probably there are good pilgrimages in other countries, if you are looking for “Pilgerwege international”, you will surely find other countries. On a church day I also saw a pilgrimage map, with a network of queer through Europe (some of them connected to others, some pieces just so for themselves), after which you can also google.
