Now I'm looking for a good all-rounder that isn't too expensive.
I was thinking about the Sony 18-135mm, for example…
Or the 55-210mm?
I realize that I have to make compromises given the low price…but maybe you have a recommendation for me?

the SEL 18-135 is the sports reporter allrounder it is small and easy to make more compromises compared to the Nikkor 18-140 or Fuji 18-135
The 55-210 is a mid-range telezoom and complements the 16-50 up
The most sensible addition would be the 55-210 or the 70-350 G, which would cost a little more
The 18-135 I would not take in your case as it overlaps with your 16-50
