I follow Apple products pretty closely with them and these are the only significant differences:
If you want the new camera button, take the 16th.
If you want to have Apple Intelligence, take the 15 per or the 16th.
If you need 120Hz or 3x zoom, take 15 per.
If battery life is important to you, take the 16.
There are currently no meaningful tests on the subject of battery, but Apple gives an extension of battery life by hours, which is not meaningless.
The best source for battery life tests is the YT channel phonebuff, but it takes time to upload something.
I personally find that the iPhone 15 Pro offers the best value for money from the three iPhones.

I think that the added value that others offer is high enough to exclude the 15. But if you don’t care about these differences (i.e. Apple intelligence, 3x zoom, camera button, 120hz, battery life), then the normal 15 is of course also an option for you, perhaps even the best.
May I ask what your exclusion criteria for the 15 is?
If you don’t need the new camera button, don’t put a value on Apple Intelligence (maybe you don’t get to Germany) and do not need a great performance, I would choose the iPhone 15.
But wait another 2-3 weeks then the prices should fall even further.
So the fact is that all 3 devices (theoretically) are enough for you in more than 10 years.
And the camera is more than sufficient for all three.
I’d just get that 16 if you want to run Apple Intelligence locally.
