I can't find much information about my project online, and I'd like to know if there are any authorities that can say anything about it.

Should you sit down with the company at the conference table and talk, or just stand and discuss everything until they leave? What's the best way to escort the company to the door so that it's not unnecessarily awkwardly quiet until they finally leave? How do you do that?

You should be able to find conditions for self-employment for every profession.
IHK or HL offer founders of existence all possible help. Otherwise there are professional associations like VDI etc.
You may be advised by tax advisors, lawyers? And of course, people who have already successfully founded in your area – only if they are not direct competition…
