I want to overtake. I wait patiently. Nothing changes. I flash my headlights once, wait, no reaction. I flash my headlights twice, no reaction. I use my horn and indicators as normal. He pulls into the middle of the two lanes so I can't overtake. Despite the perfect weather and the clean car, he puts fluid on the rear windshield wipers. Everything hits my front.
What should I do in the face of such behavior? How should I react? First of all: There was no prior history. I don't know the car, I didn't overtake him before, and I kept a safe distance!

Distance is crucial here. If you get wiper fluid on your car, you were probably too close. If he does an unexpected "brake check," you'll slam into him and be held partly responsible (or, without witnesses, perhaps even primarily responsible).
If you have it on your dashcam, you can report it. Otherwise, stay behind and wait. It's best to let the next car pass from behind. You can still overtake on the right, but I strongly advise against it if you can avoid it.
If I'm not under time pressure (which you shouldn't be anyway), I wouldn't let myself be provoked into falling back 500 meters, so he doesn't have a chance to do the same to me. Then I'll just wait and see what happens.
