whatever is outside the solar system.

In the narrower sense, it also refers to asteroids which do not circle a star but are traveling between the stars, eg https://en.wikipedia.org/wiki/%CA%BBOumuamua

inter = between, stellar = star

interstellar = between the stars.

"Interstellar space" is called the space outside our solar system but still within a galaxy.

An "interstellar object" is an object which is located in the interstellar space or comes from there.
