Depends on where you live.
In Berlin a special sausage without intestine is used for the curry sausage. In Frankfurt one often takes a red (i.e. Rindswurst) and in other areas even a sausage is taken.
In addition to the sausage, however, the curry sauce is very important. Ketchup with Curry is the worst thing you can do.

Classically you take a pre-brown fine sausage from the pig if you want to prepare a curry sausage. Grilled and not roasted.

Industrially, the specially produced, meter-long sausages are without intestines. The manufacturer of the curryking can even buy the finished pre-cut slices from the meatwork.
With us, grill sausage (brown, fine) is common, elsewhere a coarse beef sausage, sausage without pelle or even Vienna sausages to meat sausages.
Also the type of sauce varies between brown sauce, warm curry ketchup and tomato sauce
