I can only imagine that, if necessary, the nitrates can react further to nitrogen oxides, which may also happen to a small extent and these nitrogen oxides are not exactly harmless. Another explanation would be because you might use HNO3.

What steps should you do in the deduction?

I can only explain it when I’m working with concentrated nitric acid. So from opening the bottle to re-closing. Because of the vapours which should not be inhaled, but which are negligible at the usual 65% strength at room temperature.
