Weight doesn't go down after eating “a lot”?

First of all, I would like to mention that I have an eating disorder (bulimia with anorexic traits)
A week ago, I ate a little more than I normally do (due to my eating disorder). It really wasn't much (three cheesecake sticks the day after I threw up). The following day, I ate a pack of gummy bears, some pasta, and a piece of cake with my boyfriend (for the whole day). Since then, I've gained 2.5 kg and just can't seem to get the weight off. I don't know why. I've been eating less than I did the other two days, and yet my weight hasn't gone down. Why is that? I mean, I know that I weighed more in those two days because I was malnourished, and as a result, my body stores all the food I eat, plus the water that the scales show, but for more than a week? How can that be?
Probably simply water retention candies etc ensure that there is no fat yet and will also go away again hold n few days of further your entire metabolism or your body is complete in a. To understand, it might help you understand the situation: I have an eating disorder where I actually don't eat food anymore because I eat everything I eat (and yes I eat salad I don't just eat candy) just look out for fear of leaving it alone in my stomach. That means that my body is quite undernourished. Although I'm still in normal weight (which I don't understand so much because I almost don't eat anymore) but yes and my question was why it takes so long until this 2.5 kilos finally go away (I don't want to lose weight on the contrary I want to become healthy clear, but I want to understand why it takes so long)
