Water red cabbage experiment?

Hello,

We did an experiment in chemistry today where we tore up a red cabbage leaf and poured boiling water over it. I wanted to ask why the red cabbage lost its color in the process. I have to write a protocol for this and need to evaluate this experiment. At the end, we passed the mixture through a sieve and then I had a solution and the red cabbage leaves, which turned gray. They lost their color, but why? And isn't there a technical term for when another liquid disperses in water or liquid evaporates into water? What kind of chemical reaction is this?
