What should I do?

The thing is, I just don't feel comfortable at home with my parents. The food is never tidy, there's too much stuff lying around, the fridge is full, everything is dirty and disgusting…etc. I always help out and actually always do everything on my own, but soon I get fed up with doing everything and after three days everything is full of rubbish again.
I don't know what to do. I just want a nice, hygienic home.

You could take off. You’re old enough.

Otherwise, you asked why it was like that? It could be that your parents have a different sense of order.
Or, what I’d rather suspect has psychological causes. depression e.g.
Then the power is missing, and at some point is abandoned.

What you could do is find the conversation with them. And on the basis of their reactions find out whether they really don’t bother it or they just gave up on the basis of depression.

In the end, you can only support them, but you have to want it from yourself.
And if they want that their household is clean and tidy you can find ways to help them.

Be big, pull out, earn money, stand on your own legs.

If you have Messi parents, you can only give up and go, because your parents will not change.

It’s bad, unfortunately.

You’re old enough to stand independently on your own legs. But yes in a household, everyone is responsible for that it is neat and clean.

Be grateful that you live with your parents because you have a warm house to eat.
