All you eat consists of chemical components that do not all contribute equally intensively to taste and possibly also remain “in mouth” for different lengths.

If you eat chocolate, for example, it can be that you first perceive the sweet of the sugar and only with some delay slightly bitter of the cocoa. The latter would be the aftertaste
