Scarves or dibbelabbes. Only in the Saarland: peel potatoes, rub. Press through a sieve or cloth, the strength that deteriorates again. Carrot, leek, rub onion and add. Season the porridge with pepper, salt and some nutmeg. Boil small sliced bacon in the pan. Add the porridge and fry (with lots of oil) until it is brown down. Then turn and fry again, then chop and turn and fry again and again. It is pleasant and extremely saturating.

homemade potato salad, self-made potato hedges with rosemary, homemade potato puree, homemade potato buffer

Potato salad recipe:

Pellkartoffeln pellen, small nipples

add small chopped onions

Add crushed cucumber sticks (from the glass)

to add some mayonnaise (not too much)

Add a shot of cucumber water from the cucumber sticks

salt (who also likes pfeffern)

Ready!

Recipe Potato wedges with rosemary:

raw potatoes quarters

with some sunflower oil

about giving rosemary

in the oven (at top heat) crispy baking

Ready!

Potato puree:

Cook potatoes with some salt

pour

then pour some milk and stamp

add some milk depending on the strength, so that it becomes nicely creamy and loose and, if necessary, taste again with salt

Ready!

Recipe Potato Buffer:

rub solid cooking potatoes

mix with onions, egg(s), flour, some milk and salt

roasted in oil

Furnace potatoes like I do them:

Wash and brush as little as possible, dry and halve. In a pan make olive oil hot, the potato halves with the cut surface down into the hot oil. When the cut areas have accepted good color the potatoes have put in a solid form (now cut surface upward), to taste 2-3 crushed garlic cloves to it, also the oil from the pan. From the preheated furnace at about 180° for about 15 minutes. Season with salt and pepper – cowardly!

  • Potato soup – also liked by the Seiher, with small baking, a shot of vinegar and “dryed” bread
  • “Shoulder” with pears (potato bread with fried onion cubes mixed)
  • Furnace potatoes – like in a colourful oven, with vegan Zaziki, hummus and pitabrot
  • Pellkartoffeln mit Dipps und Rohkostsalat
  • Wedges with beans and barbecue sauce
  • Dauphine potatoes (like duchess potatoes)
  • Filled potatoes – with vegan sour cream
  • “New” Kartöffelchen – with bowl, to the regional asparagus
  • Potato “milk”
  • Grilled potatoes – like open fire
  • Potato spread
  • Bratkartoffeln and Pommes – all made

I like the potato buffer (as a supplement too sweet or dedicating): either the raw potatoes (Rösti / Ruberdachi) or those cooked out (with us are called the belly stecherla).

And then of course: the famous potato stew with sausages.
