Cornichons and silver onions maybe still as a supplement Bündner Fleisch, Hobelfleisch or Salsiz, most importantly is a good Swiss raclette cheese.
However, if you mean the German form of the raclette, everything is allowed… with it more than a table grill orgy with cheese and not a classic raclette.
As a Swiss I can only confirm this. Even meat doesn’t need it.
Cheese, potatoes, small cucumbers, silver wedges and white pepper and the raclette is perfect and complete.
A good white wine or tea. That’s all it takes.

There are many good recipes. Some take fruit, other vegetables, other meat, other fish, other tofu. I’ve already taken pasta instead of potatoes.
Some different types of vegetables (carrots ,Gurken, Kohlrabi, Paprika) if you want mushrooms too.
I always need meat, best on top of the raclette.
Fish is less suitable because it’s more disintegrated and then you have the rest lying around everywhere. If you have small pieces, of course. Likewise, shrimps, shrimps or the like go. Great King Prawns I would not recommend again. But, of course, it also depends on the money.
I find vegetables very well, champignons cut, cauliflowers briefly blanched or also sugar chops. Fried minced meat also fits well.
For a classic raclette you need cheese, pellet and sourough vegetables. That’s all. Originally, the cheese loaf is melted at the fire (infrared grill) on the surface and then scraped off. Of course, you can also melt cheese slices under a pruning knife. This is practical for a few people.
