Damit der Reis auch gar wird? das verkocht dann eh fix beim Reis, der kann ziemlich Wasser aufnehmen wenn er will.
Wahrscheinlich wird es sonst zu trocken.
Damit der Reis genug Wasser zum ziehen hat ohne dass es brutal sauer-tomatig wird.
