The preservatives (E numbers) primarily affect the colour and smell of the food.

Sorbic acid and its salts have almost no inherent taste.

This also applies to flavor enhancers.

Because they shouldn’t taste like something in their concentrations. And because you’re not an analysis body like a gas chromatograph.
