Bin absoluter Laie aber ich habe gedacht, dass jeder höher die Zahl nach dem “i”, besser und stärker wäre als die davor. Demnach wäre eine Core i7 egal welcher Generation, immer besser als eine Core i5 egal welcher Generation.

In this respect, low and medium products of a new series are often faster/better than top models of a previous series. In your example, no extreme TOP models are compared, but 12700 and 13600. There are no worlds in between. However, it is necessary to compare all factors. As soon as the clocking, cores, core types etc. are different, this can no longer be compared in a flat-rate manner. You should also look at the power limitation.
It would be the same if I compared an older high-end graphics card with a new middle-class card. Different series/generations are just the crunch point.
