My girlfriend and I want to go on vacation for four days in mid-October. Where can we experience beautiful nature at this time of year? It doesn't necessarily have to be warm. It shouldn't be in Germany, ideally. Neighboring countries would be cool.

Alsace! (From Kleve, from here it’s about 6h drive). There is great nature, wine, vineyards, good food.
I can recommend the Chambard in Kaysersberg, but this is only starting at about 200€ the night (at the best it would be from 9-12 October). But the money is really worth it because it has a great spa area.
Otherwise super cheap and really nicely located right on a lake (but really is in the middle of nature and you have to go to the car if you want somewhere else) the Hotelerie Saint Hubert in Hambach.
