I want to hang my TV on a drywall. How can I determine the thickness of the drywall so I know how long the anchors need to be? Do drywall always have a cavity so the anchors can expand accordingly?

Yes. Plasterboard walls are usually single- or double-layered. One layer is 12.5 mm thick, or two layers are 25 mm thick. Therefore, it's essential to use extra plasterboard expansion anchors (especially for heavy loads like a television), as regular anchors at approximately 40 mm would simply sit in the cavity and not anchor firmly to the board (they would tie a knot behind it).
For example, you could pre-drill a small hole and then insert a soft wire or a straightened paper clip with a slight angle at the tip into the hole. Then pull it against the back of the board and make a mark on the front. When you pull the paper clip out again, you can use it to measure the thickness.
