Why did all classes in the Middle Ages, from peasants to nobles, drink wine in large quantities (2 liters per person)?

From peasants to the nobility, all classes in the Middle Ages drank wine in large quantities. Each person consumed approximately 1-2 liters per day. Were they all alcoholics, or was wine not so strong back then?
