Wanted to bake cookies and the recipe says 100g sugar and 60g brown sugar. Can I just use 160g of regular sugar? Does that make a difference? Will the dough be sweeter?

Can I refrigerate the cookie dough before putting it in the oven (of course), but will that change the consistency or the baking process? Or is it better to put it straight into the oven? Or does it make no difference at all?
