Cellulose is a complex carbohydrate and consists of long chains of glucose molecules. The chains are linear and row parallel to one another and form so-called microfibrils.

why is it water-insoluble?

Owing to this highly organized and crosslinked structure, cellulose is insoluble in water.

Does a crystalline structure form?

Yeah. The crystalline structure of the cellulose results from the alignment of the cellulose chains.
