Spielen die Anzahl der Liganden bei Komplexen eine Rolle für ihre Stabilität?

Kann man sagen, dass z.B. [Zn(OH)4]2- stabiler als [Zn(en)2]2+

ist aufgrund der Anzahl der Liganden? Oder spielen andere Faktoren wie Ladung auch eine Rolle?

It all plays a role. Charges, electronic properties of the ligands and the central atom, location and availability of the orbitals, etc.

In this case, you have a zinc as a central atom. This has a d10 configuration, i.e. the d-orbitals already fall away as potential binding partners. So you have to resort to the s- and p-orbitals and hybridize. Therefore, the tetrahedral structure. Now you have a lot of electron density at the central atom with the full d-orbitals. With the OH ligands you pack even more on top (both by charge and by the free electron pairs). It would be best to remove electron density. Although the nitrogen in the case of ethylenediamine cannot do this, it does not bring so many electrons. This is also a bidentate ligand, which simplifies coordination. So would say that en is better than ligand than OH, both complexes probably being relatively unstable.
