Ragu Bolognese is not eaten with spaghetti. That’s illogical. The Ragu must stick to the noodles and this is not possible if the noodles are almost as thin as the pieces of meat and vegetables. Pappardelle or penne are actually the right noodles for it.

So I’m Team Spaghetti Carbonara. This is a classic dish that is specially adapted to the peculiarities of spaghetti. It gets really horny when you use a real Guanciale and leave the pieces big enough to get a crusade in the pan without burning them. But I find it difficult to find this bacon outside of Italy in the store.

I would say that I am a relatively ok hobby cook and I have never really managed the classic Italian carbonara, even if the recipe looks simpler it is more effort than a really good Bolognese that needs only more time

Spaghetti Bolognese . I always like when my food is beautifully colored. Carbonara is so pale 😅 and also I like to add to pasta 🍅

Carbonara – but only if it is well done.

  • Guanciale (to Not Pancetta)
  • Pecorino (Parmegiano Reggiano is also OK)
  • Spaghetti al bronzo
  • fresh eggs
  • salt, pepper

I’m out with other ingredients. I consider cream and cooking ham in a Carbonara as a crime against humanity!

Absolutely PRO BOLOGNESE, because I love minced meat for the first time, secondly I like Carbonara less because I like heated bacon or ham not very much.

In any case, Bolognese. Lunch must always be halfway spicy with me. So creamy, less spicy things, also for example Cheese sauce can be done, but then only if I rarely really get jack on it.

Actually, I like both and would like to make Carbonara again. But my girlfriend doesn’t like Carbonara and for a portion it’s not worth making Carbonara.

Come to the practical part:

Bolognese can be warmed up again the next day while warmed up Carbonara simply tastes disgusting.

The Bolognese won.

I like both very much – provided both dishes are very well done. “My” Bolognese simmers at least 6 hours ahead, mostly longer. And a Bolognese includes Tagliatelle and no spaghetti.
