Italians beat their hands desperately over their head when they see Carbonara with white sauce and pray to Mary that the world will not go down.

In Roman Carbonara there are only egg, pecorino (a hard cheese) and guanciale (spoke from pork cheek or neck). Parmesan and normal bacon also go to emergency.

No sauce. But the theme is only for people who are bored 🙈🤣🤣🤣 because I am convinced that nobody can really say what is original.

Eggs, Guanciale (I’m lucky to get him), much freshly ground black pepper, Pecorino. The white sauce is formed in which the pasta’s cooking water is mixed with the grated cheese, eggs and the Guanciale.

Carbonara is not a ham cream sauce, even if it also tastes good.

In the original recipe there are bacon, eggs and parmesan. (Manche add cream; isvaber not original.)

Original (if you know): Pancetta fried, parmesan, egg or even egg yolk, pefffer, that was.

At my home isn’t Italy, I can smell 2-3 tablespoons of cream into the egg yolk and choose a leaner bacon instead of the extremely fat pancetta.
From me, I call it spaghetti after Köhlerart when the Italian souls calmed;)

There’s only Pecorino coming in, Egg and Guancale/Speck.

Garnish with parsley 🌿 and black pepper.

Leave bacon, put aside with a pan.

Add cheese and egg, if necessary add pepper. Stand by.

Cook noodles.

When the noodles are finished, you pour them off. Catch fresh water, if necessary you can make the whole creamier later.

Turn the noodles in the pan with the bacon. Finally, add the ovine dimensions. Take off the stove, serve immediately.
