I'm keeping a junk journal (a journal where I jot down things I find throughout the week, like a movie ticket from when I went to the cinema). I don't know whether to use dotted or blank. I personally prefer blank, but it wouldn't be as good for writing down what I definitely want to do.

If the paper is thin enough, you could take blank paper and deposit a paper with lines at the desired distance for writing.
If you just want to glue and shape something, a blank is enough because they are often significantly cheaper than dots. If you want to write something in, you can stick a piece of lined paper, which can also look very pretty, especially if it is still coloured
