It is the same starting material, namely salmon fillet. Once cut into portions, raw and cooled. On the other hand, a fried or grilled steak from the body cross-section with middle bones.

Raw and especially fresh salmon can be processed raw as sushi or tartar. I love it. As a steak, at least some of it is fried through, the core should be still glassy raw than just slightly heated.

By the way, TK-Lachs is not recommended, the pieces are usually not the same as raw filets.

Mag Lachs not special – in general fish is really mine. I can imagine that the fat content is a little higher than the rest of the salmon. That could affect the taste as much as possible.

Differences exist only in the preparation, cold smoked lactice tastes different than hot smoked, grilled differently than fried and fried differently than cooked.

That’s the same meat. Just cut differently.
