How to prepare royal icing correctly?
Hi, I love baking and decorating cookies. I also want to become a hobby cookie artist, but I don't have a good icing recipe and would like to know which one is best for borders and which one is best for surfaces.
PS: Can you recommend icing pens?

Royal Icing- in german by the way protein spray glaze- is made from egg clear + powder sugar.
For surface-to-coating it must be viscous, solid for spraying.
You simply control the amount of added (slope-free) dust sugar.
Protein glaze also doesn’t need much longer to get stuck than a spray glaze, because you paint the much thinner. But at least 24 hours.
