My older cousin has a navel piercing and wanted to sit on my horse and maybe ride a bit (I would lead the horse for her)
Do you think she should take the piercing out beforehand or can she just leave it on while riding?

Take out security. When you get off, it can go bad.
In sport: pull out jewelry (also suitable for piercings). Learn in school 😉
