Isn’t it more a pars per toto construction? That is, you take part for the whole thing. Because of course “young blood” has blood and is young. With a metaphor, something is always taken from another area, but here it is the same area of the human body.

It is a memonymy, or more precisely a pars pro toto. It means that not only the blood, but the whole person is young.
