Whether you want to bake wind bags, profiteroles or Eclairs: the dough is always the same. The only difference between the three countercards is the form: wind bags are about faust-sized bollens, profiteroles should be about as large as walnuts after baking, and Eclairs are specially shaped with the spray bag.

The difference is the size. And that wind bags are cut open, profiteroles are filled with a syringe.
