Petersilie, Thymian, rosemary and sage I now harvested outside (protected right at the terrace door). At cold I cover the pots.
Thyme also tastes well dried. Still use which I harvested in Greece a few years ago.
Petersilie tastes fresh. You can forget it dried.
We used to have parsley in the garden. I remember the taste very well. Dried, also “sweetly freeze-dried” has no taste. You can leave it so well.
