Oil in the pot shelf life?
Hi, quick question. I use regular oil to fry fries in a regular pot. How long can I let it sit and reuse it, especially at these temperatures?

You have to let the oil cool and then run through a fine sieve. Now you can safely store it in the refrigerator.
It has been in the kitchen for a week but not in the refrigerator

Although the germs are killed in the oil by heating, germs can also produce toxins which are sometimes very heat-resistant.
Please do not use this oil anymore!
Then I wonder how do all the snack bars etc with their fryers?
