What are nitrosamines? Do they have anything to do with mutagens? There's not much information about them online…

Nitrosamines are decomposition products of carbohydrates, especially starch. They are produced in a safe amount when, for example, potato is made too dark. They are considered to be carcinogenic.
“Mutagene” is a collective term for substances which have a varying effect on inheritance, which can usually be negative but also positive.
