Newer macOS on iMac 7,1 without OpenCore?
I'm still using my 7.1, which still works today and works well on El Capitan with all programs, only a few apps that I would like to have don't work, luckily Chromium is the latest browser that can load every website, but I don't want to do a CPU upgrade and that's why OpenCore doesn't work and the dos1dude patcher or whatever it was called doesn't work either… A CPU upgrade is also worthwhile because everything is still fast enough and no other upgrade is necessary, but I want to use at least Mojave or High Sierra on it…. What should I do?
OpenCore should also work without CPU upgrade, as it does not work on the CPU but on the EFI of your hard disk. So you should try using the recommended EFI to select the correct MacOS version in the Readme for the EFI and boot the computer in the appropriate mouse/boot key.
One should always take a look at the list of support models, as in addition to the models there are also relevant additional information.
It depends not only on OpenCore and Patches at EFI level, but also on the system requirements of macOS. It is therefore necessary to observe certain things, especially if it is explicitly included in the documentation.

If you don’t want to upgrade CPU, it’ll be difficult. OpenCore and the patches do not work without the necessary system requirements.

If you want to upgrade using third-party software, you need to meet the system requirements. There are not even requirements from the patch itself, but components that require a newer macOS.
The OpenCore Legacy Patcher is the best tool for running a macOS upgrade without support on a Mac. Either you meet the necessary system requirements or you’ll have to come out with your OS.
