I just wanted to watch Demon Slayer, and apparently there are only German subtitles. Even though I selected English in my profile settings. I deleted the app and re-downloaded it, but again I only get the option to play German or nothing. Even the display language on my phone is in English. Does anyone know a solution?

It has nothing to do with the attitudes, but in which country you are. If Netflix DE only provides German subtitles, you can only choose German subtitles. This is not on your device or on the Netflix app, but directly on Netflix and purchased licenses!
