Minced meat strange inside?

I was on vacation for three days and had previously (on the first day) bought packaged minced meat (beef and pork) which I stored in the refrigerator.

Now I wanted to prepare it, but the package had slumped inward (like a vacuum), it had turned dark brown with dark brown juice at the bottom, and it smelled sweet after opening. I threw it away and bought a new one, but what happened?

It may be that the refrigerator was too warm or a small hole has got into the pack and so naturally air could get in and then it has become bad.

I read that.

It may have happened when packing. A kind of gas is sprayed into the pack, as the meat is durable for me a few days and the paint does not lose. If this gas does not reach the packing completely or not at all, it is then drawn in by the incursion of the meat.

I’m a butcher and I’ve got something more often. This will actually be sorted out on the sample, but it can happen that a pack is overlooked. Are everything only people there, even if it is annoying for oneself

I answer, but I’m sure. If there is normal air in the packaging, the oxygen can oxidize. This then produces a vacuum. This also gives the meat a gray-brown color.

Today, however, this is usually packed under a protective atmosphere. This is only nitrogen, without oxygen. This is done so that the meat remains beautifully red. Perhaps this manufacturer does not (small operation), or there was an error in the protective atmosphere (nitrogen bottle was empty).
