With a syrup, the marzipan would be greasy and you could not use it further, except for a strokeable filling.

So you wouldn’t get a marzipan blanket or a figure. It would stick to your fingers/do not let it roll out, no longer refresh, and stand it in a normal room, jerk-zuck start to mold, to ferment or simply “slubge”.

Artificial food color is vegan.

You could.

But Marzipan is very sweet and syrup is even sweeter. That’s why I’d color food.

No, Marzipan gets dirty or the coloring is not homogeneous and strong enough. Buy red food color at the supermarket. But carefully dose it has high color intensity.
