Moin,

at CAT I / CAT II, the autopilot is switched off and manually flew after the decision height (DH/DA desicion height, desicion height).

at CAT III must be landed by car and the autopliot must be capable of intercepting the aircraft, the so-called FLARE.

Aircraft with an HUD may also perform CAT III landings manually.

and what is CAT I/CAT II and CAT III? And when is which used?

It’s both possible. However, the automatic method is preferred.

The decision lies with the pilot. It is often taken over in the short final, for example. The entire approach can also be flown manually. However, depending on the ILS-Cat, you can no longer land manually (I think from Cat2), but you have to go to the auto country.

Please don’t answer if you have no idea! Automatic landings are possible, the pilots land manually in most cases! Usually whenever the visibility allows!
