igittigitt… sorry, absolutely does not like milk in the agitator.

What you can do as an alternative is to cover the pan with oil and heat it up high… then you get a virtually fried as soon as the egg comes into the totally hot pan (=Asian variant).

Egg to milk so between 2:1 or even 1:1, so the agitator is not so dry even if it is cooked a little longer.
Because I’ve got owls in front of raw egg, I’d rather get a minute too long.

I sometimes give 1 tablespoon of water or mineral water to the agitator, but not always.

That’s what I’m doing.

Stird eggs with very little butter, spring onions, corn, soy sauce, some sesame oil. I also like a very small bowl of rice or Kimchi.

The “biss” is what the professional calls rubber-like. A good scrambled egg, with spices is not faded
