I'm looking for an alternative to Jimdoo. I'm not thrilled that you can't add a guestbook, which was possible 6-7 years ago, and I don't think some other features are as great anymore. What other website builder options are there that definitely offer a guestbook and are as easy to use as Jimdoo?

I’d guess WordPress. There are many providers like lima-city or netcup that offer you a webspace with domain and you can download WordPress directly there, which is also a modular with significantly more functionalities.
When it comes to a free alternative, WordPress.com also offers a subdomain that you can use including a modular system.
